All American Bruschetta

Ingredients:

Baguette

1 baguette, sliced into ½” rounds 
 (roughly 36 slices)

3 Tbsp olive oil

1 garlic clove, cut in half

Tomato Basil Topping

1 cup cherry tomatoes, sliced into rounds 
(or halves depending on size)

2 Tbsp basil, chiffonade

1 garlic clove, minced

1 Tbsp olive oil

½ tsp salt

¼ tsp pepper

Herbed Topping

7.5 oz ricotta cheese

3 Tbsp scallions, minced

1 garlic clove, minced

¼ tsp salt

⅛ tsp pepper

Blueberry, Honey and 
Lemon Zest Topping

7.5 oz ricotta cheese

1 Tbsp honey, plus more for drizzling

1 lemon, zested

½ cup blueberries

Steps:

• Preheat grill to medium heat. Brush baguette slices with olive oil and grill each side until lightly browned, roughly 1-2 minutes per side. OR Preheat oven to 350° F. Brush baguette slices with olive oil and bake for 8-10 minutes, until golden brown. Remove bread from grill (or oven) and rub cut side of garlic clove on 27 slices.

• Tomato basil topping: in a medium-sized bowl, combine tomatoes, basil, garlic, olive oil, salt and pepper. Toss gently. Set mixture aside for a few minutes to allow flavors to blend. Top 12 garlic rubbed baguette slices with tomato mixture.

• Herbed topping: in a medium-sized bowl, combine ricotta cheese, scallions, garlic, salt and pepper.  Spread ricotta mixture onto 15 garlic rubbed baguette slices.

• Blueberry, honey and lemon zest topping: in a medium-sized bowl, mix ricotta cheese, 1 Tbsp honey and lemon zest together, reserving a bit of lemon zest for garnish.  Spread ricotta mixture onto remaining 9 baguette slices. Place blueberries on top of ricotta mixture, drizzle with honey, and garnish with lemon zest.

• Assemble baguette slices into an American Flag and enjoy!

    Yields: 12 servings
